The Trinidad scorpion is one of the hottest peppers in the world. It can reach up to 2 million Scoville Units. It also has a great, fruity citrus and floral aroma. We chose to accent this with the addition of sweet, ripe Clementines. As always there is no added sugar, so we get some natural sweet notes from the clementines and also from the juicy Jonagold apples.

This is one of the hottest sauce we have made so far. Those Trinidad Scorpion Moruga peppers don’t mess around. It comes on pretty strong straight away and builds over about a minute. Then it stays at a peak for 3 to 5 minutes, all the while hitting the middle of the tongue like a million delicious little daggers. It then drops away pretty quickly. Of course all of this depends on how much you eat. This description is based on eating a tea spoon directly. It behaves quite differently if its mixed in with food or spread on a burger, but is still very much a slow builder with a powerful but enjoyable burn.
